Gate Gourmet Designs First Class Menu Concept With Hawaiian Airlines
Gate Gourmet has collaborated with Hawaiian Airlines to design and debut an exciting new First Class “tasting menu” concept for the carrier.
Modeled after the popular dining style found in high-end restaurants, Hawaiian’s onboard tasting menu lets First Class customers create their own meal by pairing choices from a wide range of entrees representing different cuisines and featuring unique ingredients.
For breakfast, travelers will select two of three entrées and also
receive a fresh plate of assorted fruits. For lunch and dinner,
customers select three of five entrées to create their meal. Depending
on the route, lunch/dinner selections may include such mouth-watering
options as Spinach and Feta Cheese-filled Roasted Eggplant Roulade with
Sauce Pomodoro and crispy Fried Risotto Marble, or Chicken Tandoori
served with a tangy Makhani Sauce and Sultana Basmati Rice Pilaf.
The inspired concept is the creation of Gate Gourmet’s eGate Solutions team, who designed the tableware, tray set-ups, packing and service routines. The team also worked in close collaboration with award-winning Hawaii Regional Cuisine Chef Beverly Gannon, Hawaiian’s executive chef and owner of two acclaimed Maui restaurants, to design the sumptuous menu. The team then helped train the kitchen staff and Hawaiian’s crew members.

Following a thorough bid process, Hawaiian recently agreed to continue working with Gate Gourmet as its exclusive caterer. The carrier also has renewed its contract with Gate Safe, Inc., and has engaged eGate Solutions to perform a number of management services including Sourcing and Procurement; Asset Management; Galley Planning; and Product Design and Development.
